How to Make Gavin Happy: Bacon Pizza

Why so happy?

This weekend Gavin and I made pizza — mainly because I let him pick what he wanted to make with bacon.  Why bacon?  We forgot to take meat out on Saturday so we had to pick something we could sink-thaw quickly.  Not having a microwave is complicated sometimes.

Anyyyyway, to make this pizza, you can use whatever dough you want.  We used a quick pizza dough recipe I found on Oven Love.

Ingredients:

  • 1 tablespoon active dry yeast
  • 1 cup warm water
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 2 1/2 cups flour

Mix the yeast and water.  Then add the rest of the ingredients and mix together.  Knead for five minutes either by hand or with your stand mixer.  Spread it into a greased pan, top, and bake at 450˚ for 12-15 minutes or until it’s crispy and looks like pizza.

We used homemade pizza sauce (we made a second batch on Saturday night) using the recipe from The Ball Complete Book of Home Preserving.  Top with mozzarella cheese AND slightly undercooked bacon cut into bite-size chunks.  I baked it in a roasting pan which was a good choice because the dough spread out fairly large.

    You undercooked the bacon, but Gavin still ate it? Big steps.

      Good point, Tara! We “undercooked” the bacon (to what I consider done) so that it wouldn’t burn disgustingly while the pizza baked. I think that was a wise decision and would definitely do it again next time we make this.
