Delicata squash is super-tasty. I had never had it before today, but I can now highly recommend it. It’s possibly the easiest and fastest kind of winter squash to prepare because you don’t have to peel it! And it’s not super-hard to cut open! The one caveat is that it doesn’t store as well, so you need to use it faster.
So basically, you just cut it in half and scoop the seeds out, like any other winter squash.
Then you cut it into smiles and roast it for about 25 minutes at 400˚ on a cookie sheet, or until it’s tender and browned to your liking.
